FRIED POTATOES WITH PEAS,
CARROTS
 
3 tbsp. shortening
6 lg. potatoes
1 lg. onion
1 lg. green pepper
1 tsp. salt
1 tsp. pepper
1 can peas & carrots (or pork & beans)

In a large frying pan melt shortening; peel and slice potatoes and put into hot grease pan. Sprinkle salt and pepper, dice onion and green pepper. Add to potatoes. Let fry until done, turning potatoes every 5 minutes. When potatoes are done add can of peas and carrots. Let fry for 5 minutes on low heat and turn once in a while until done. Serve with meat or eggs or by themselves.
