WINTER HARVEST CASSEROLE 
2 tbsp. butter
1 c. chopped onion
3/4 c. chopped celery
3 tbsp. flour
3/4 c. beef broth or chicken broth
1/4 tsp. Tabasco pepper sauce
1 sm. head cabbage, cut in chunks
3 med. carrots, cut in chunks
3 med. potatoes, cut in chunks
1 lb. sausage, cut in 1 inch pieces
1 bay leaf

In medium skillet melt butter, saute onion and celery until crisp-tender. Stir in flour; cook 1 minute. Gradually stir in broth until smooth. Add Tabasco sauce; mix well. In a 3-quart casserole arrange cabbage, carrots, potatoes and sausage, pour broth mixture over all. Add bay leaf. Cover and bake in a 350 degree oven 45 minutes. Uncover; bake few minutes longer until vegetables are tender. 4 servings.
