FROZEN FRUIT SALAD 
1/2 tablespoon cold water
1 tablespoon unflavored gelatin
1 cup mayonnaise
1 1/2 cups whipping cream
1/2 cup crushed canned pineapple
3/4 cup halved ripe fresh strawberries
3/4 cup small diced orange pulp
1/4 cup minced maraschino cherries
1/8 cup finely chopped moist dried figs

In a Pyrex bowl, stir unflavored gelatin into cold water and allow to stand for 5 minutes. Stir well. Microwave for about 3 minutes or until steaming hot and gelatin has melted. Cool 5 minutes. Stir into mayonnaise. Then fold into heavy cream that has been whipped until stiff.

Stir in crushed pineapple, fresh strawberries, (or use drained thawed frozen diced strawberries) oranges, cherries and figs.

Put mixture into a three-pint mold or individual molds and freeze. If not using right away, freeze in an airtight container.

To serve, thaw in the refrigerator until the consistency of ice cream.

Variation: Stir in 2 cups mini marshmallows. 1/2 cup walnut or pecans may also be added.

Since microwave ovens vary in power, you may need to adjust your cooking time.
