FISH ITALIAN STYLE 
1 lb. cod, haddock, pollock, bluefish or mackerel fillets
3 tbsp. olive oil
4 tbsp. chopped onion
4 tbsp. chopped green pepper
2 cloves garlic, minced
3 c. peeled, crushed tomatoes, fresh or canned
2 tbsp. parsley
2 bay leaves
2 tsp. Italian seasoning, or basil
10 slices mushrooms or sm. can drained mushrooms
1/2 tsp. black pepper, or to taste

Place fish in large casserole; set aside. In a medium casserole, combine oil, garlic, onion and green pepper; stir. Cover, microwave on high for 2 minutes. Stir in tomatoes, parsley and seasonings. Microwave on high 2 minutes. Add mushrooms; microwave on high 1 minutes. Remove bay leaves. Pour sauce over fish. Cover, microwave on medium-high (80%) for 4 minutes. Let stand 3 minutes, then serve. Makes 4 servings, 369 calories each.

Since microwave ovens vary in power, you may need to adjust your cooking time.

I made this for supper and it was amazing.... we added Parmesan cheese to top it off!!! Just amazingly yummy!!
