SQUASH CROQUETTES 
2 c. finely chopped squash or zucchini
1 c. finely chopped onion
1 egg, beaten
1 tsp. salt
1 tsp. pepper
1/2 c. flour + 1 tbsp.

Combine all above ingredients and drop by tablespoons 1/2 inch thick, in hot oil. Cook until brown, turning once.
