RICOTTA CAKE 
1 pinch salt
1 tbsp. flour
4 tbsp. sugar
1 1/4 lbs. Ricotta cheese
4 lg. eggs, separated
2 tsp. grated orange rind
2 tbsp. confectioners' sugar (powdered)
2 tsp. grated orange rind

Drain ricotta. Preheat oven to 350 degrees. In large bowl, mix first 6 ingredients. Beat 5 minutes. In separate bowl, beat whites until thick. Fold into ricotta mixture. Butter and flour a spring form pan. Pour batter into prepared pan. Bake 40 to 45 minutes. Mix powdered sugar and cinnamon. Sprinkle over top of cooled cake.
