AUNT MAGGIE'S RICOTTA CHEESE
CAKE
 
1 doz. eggs
3 lbs. ricotta
1 can evaporated milk
2 c. sugar

Blend all together with mixer, put mix into pie crust of your choice. The mix should look too liquidy. You will probably need 2 pie crusts as this cake is baked in a 3 quart casserole dish. Bake at 375 degrees until cake rises and is brown on top; approximately 1 1/2 to 2 hours. DO NOT open oven when cake looks done. Turn off oven and let cake cool in the oven or the cake will fall.
