RICOTTA CHEESE CAKE 
1 c. sifted flour
2 tbsp. sugar
1/2 tsp. baking powder
1/4 tsp. salt
1/3 c. butter
2-3 tbsp. milk

Mix all dry ingredients. Cut in butter. Sprinkle milk over to moisten and form a ball. Press mixture evenly over bottom and up 2 inches on side of ungreased 9 inch springform pan. Chill while preparing filling.

FILLING:

1 lb. ricotta
6 eggs
1 tsp. vanilla
2 (8 oz.) cream cheese
1 c. sugar

Cream cheeses with sugar. Add rest of ingredients. Blend well. Pour into chilled crust.

Bake at 350 degrees for 50 minutes. Turn off oven and let stay in oven 40 minutes. Make sure firmly solid in center. Top with cherry or berry pie filling or serve plain.
