SPICE MUFFINS 
2 c. flour
1 egg, well beaten
1/2 c. sugar
1 c. milk
1/4 c. oil
1 tsp. ginger
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. salt

Sift into bowl, flour, sugar, spices, baking powder and salt. Combine egg, oil, and milk. Mix two mixtures together. Spray muffin tins and fill 2/3 full. Bake at 425 degrees for 15 to 20 minutes. These are good the next day.
