BLACKFISH DI SCOLGLIO 
3 lb. black fish, cleaned and slit down the middle
1/4 c. olive or corn oil
3 oz. Rhine wine
1/2 tsp. marjoram
1/2 tsp. black pepper
1/2 tsp. garlic powder
1 tsp. salt
1 tbsp. lemon juice
4 plump tomatoes, chopped sm.

Use oven pan large enough to fit fish snugly. Lay fish on side in pan. Open the slit side and place all ingredients except tomatoes, inside fish. Place tomatoes on top of fish. Bake at 350 degrees for 70 minutes. Remove and serve. Makes 4-6 servings.
