PICKLED PEPPERS 
Approx. 5 to 7 lbs. peppers, washed & sliced & placed in very lg. bowl with cover
Oregano, sugar, salt & white vinegar

After you slice all the peppers and 1 to 1 1/2 cups of sugar to peppers, 1/2 cup of oregano, salt to taste and for 2 cups of vinegar. Add 2 1/2 cups of water. Shake up in bowl. Leave in refrigerator for 5 to 7 days. Take out of refrigerator and drain in colander and place in platter or back in bowl and add oil to your liking and serve with meats or cold cuts, etc.
