CHICKEN AND DUMPLINGS 
1 chicken, cut up
1 stick butter
1 tsp. black pepper
Salt

DUMPLINGS:

2 c. flour
1 tsp. salt
2 tbsp. shortening
Water to make dough

Place chicken in large boiler, and cover with hot, slightly salted water. Add pepper and butter. Boil until chicken is tender. Repeat water until chicken is covered.

DUMPLINGS: Sift dry ingredients. Cut in shortening. Add water to make a stiff dough. Roll out 1/8 to 1/4 inch thick on a floured surface. Cut into 3 x 1 inch rectangles. Drop one by one into boiler with chicken and boiling broth. Reduce heat to simmer. Cover and let cook 15 minutes. Do not remove cover while dumplings are cooking. Salt dumplings to taste. Serves 10.
