BASIC TOMATO SAUCE 
5 ripe tomatoes, coarsely chopped
2 tbsp. olive oil
2 cloves garlic, minced
1 1/4 c. chopped onions
1 bay leaf
1 tsp. basil
1/8 tsp. celery seed
Pinch of thyme
3 sprigs parsley, finely chopped
Oregano and/or cayenne pepper to taste

Puree tomatoes in blender. In large saucepan, heat oil and saute garlic and onion. Add pureed tomatoes, bay leaf, basil, celery seed and thyme. Cook over low heat for at least 45 minute (the longer the better). Add parsley and cook for 2-3 minutes more. Remove bay leaf. Season to taste with oregano and/or cayenne pepper.
