BANANA NUT CAKE | |
2 1/4 c. flour 1 2/3 c. sugar 1 1/4 tsp. baking powder 1 1/4 tsp. baking soda 1 tsp. salt 2/3 c. shortening 2/3 c. milk 3 eggs 1 1/4 c. mashed ripe bananas 2/3 c. chopped nuts Measure all ingredients into large bowl. Blend 1/2 minute on low, then 3 minutes at high speed, scraping bowl occasionally. Pour into greased and floured pans (13 x 9 inch) or 2 (8 or 9 inch) round pans. Bake oblong cake, 45 to 50 minutes and layers for 35 to 40 minutes at 350 degrees (wooden toothpick should come out clean when inserted in center). |
