CHICKEN IN APPLE MUSTARD SAUCE 
4 chicken breasts, boned & skinned
2 tbsp. butter
1 c. apple juice
1 med. onion, sliced
1 clove garlic, minced
1 tsp. thyme
4 tsp. Dijon mustard
1 apple, cored & sliced

Flatten chicken breasts with dull side of French knife. Melt butter in skillet. Add chicken and brown. Add apple juice, onion, garlic and thyme. Cover and cook 10 to 12 minutes or until chicken is tender. Remove chicken and keep warm. Bring liquid to a boil. Add the mustard and stir well until blended. Add apple slices. Pour sauce over chicken.

Makes 4 servings.
