COCOA OATMEAL CAKE 
1 1/3 c. boiling water
1 c. quick cooking rolled oats
1/2 c. butter
1 c. granulated sugar
1 c. brown sugar
2 eggs
1 1/2 c. flour
1/2 c. cocoa
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1 c. finely chopped peeled apple
1 c. chopped nuts

In small bowl, pour water over oatmeal. Let stand 15 minutes. Heat oven to 350 degrees. Grease a 13"x9" pan. In large bowl beat butter, sugars and eggs until light and fluffy. Blend in oat mixture. Combine flour, cocoa, baking powder, baking soda and cinnamon. Add to butter mixture, mixing well. Stir in apple and nuts. Pour into greased pan.

Bake 30 to 35 minutes or until toothpick in center comes out clean. I also bake this in a 10" tube pan. Powdered sugar or vanilla glaze is good on this.
