COCOA FUDGE 
2/3 c. cocoa
3 c. sugar
1/8 tsp. salt
1 1/2 c. milk
1/2 stick butter
1 tsp. vanilla extract
1/2 c. peanut butter (optional)
1/2 c. nuts (optional)

Combine cocoa, sugar and salt in heavy 2 quart saucepan. Gradually add milk, mixing well. Bring to a bubbly boil, stirring continuously. Reduce heat to medium and continue to boil until mixture reaches soft ball stage (on candy thermometer or when a few drops can be formed into a soft ball when dropped into cold water). Remove from heat. Add butter and vanilla. Stir well. Cool for 5-10 minutes. Beat until fudge starts to thicken and looses some of its gloss. Pour into buttered 8 x 11 inch pan, cool and cut.
