PAPPY KING'S BRUNSWICK STEW | |
1 lg. hen 4 lbs. beef 4 lbs. pork 10-12 cans corn 10-12 cans garden peas 10-12 cans butter beans 1 bottle Texas Pete 3 bottles Worcestershire sauce 6 or more bottles catsup 4 lbs. onions, chopped 6-7 lbs. potatoes, peeled & cubed Place hen in pot, cover with water, bring to a boil. Reduce heat and simmer 1 hour. Remove hen from broth, reserving broth. Let hen cool then bone the hen and coarsely chop meat. Set aside. Repeat process for cooking beef and pork except cook beef and pork 2 hours reserving broth. Combine hen, beef, pork and reserved broth. Add remaining ingredients. Cook until thick. May be cooked on top of stove 3 to 4 hours or outside in iron pot (takes all day). Yield: 5 gallons. |
