RED CABBAGE | |
2 lbs. red cabbage 4 slices bacon 4 tbsp. fine cut onion 2 apples, core, cut in thin slices 1 tbsp. caraway seed 1/4 c. vinegar 1/4 c. honey (opt.) 1/2 tsp. salt 1. Shred cabbage, soak in cold water (until bacon is done). 2. Cook bacon over low heat, add onions; saute. 3. Lift cabbage from water, leaving moist, into large, heavy pot. Cover, steam 10 minutes. 4. Add apples, vinegar, honey, salt and caraway. 5. Cover, simmer slowly for 1 hour 20 minutes. 6. If water has not been absorbed when cabbage is done, uncover and cook gently until it is absorbed. |
