CHINESE PEPPER STEAK 
1/2 lb. London Broil steak, or round steak
2 tbsp. shortening
1 sm. clove garlic, minced
1 sm. onion, minced
1/4 tsp. salt, dash of pepper
2 tbsp. soy sauce, 1/4 tsp. sugar
Carrots, cut in sm. strip, 2 or 3 as desired
1 green pepper, cut into strips
1 tsp. cornstarch and 1 tbsp. cold water

Slice steak as thinly as possible into short. In skillet heat shortening and in strips. It saute beef slices until lightly browned on both sides. Add garlic, onion, salt and pepper and saute 1 minute longer, stirring. Stir in soy sauce and sugar, cover and cook over high heat for 5 minutes.

(Add bean sprouts, tomatoes, and green pepper). This has been substituted in Lita's recipe for carrots; add carrots and green pepper here. Cook above for 5 minutes; dissolve cornstarch in water and stir into sauce; cook and stir until thickened. Serve with cooked rice and fresh soy sauce.

Note: Fresh green onions may be sliced and sprinkled on top before serving, if desired. Also, vegetables should be crisp and not cooked until tender.
