CHICKEN BROCCOLI CASSEROLE 
1 lb. chicken, cooked
3 oz. chopped onions
1 (12 oz.) pkg. broccoli cuts
2 oz. grated cheddar cheese
2 c. bread crumbs
8 oz. can cream of chicken soup
1/2 oz. butter
2 tbsp. flour
Dash of salt
1/4 tsp. pepper
1/2 c. skim milk

Combine chicken, onions, broccoli cuts and cheddar cheese. Place layers of chicken mixture, bread crumbs, cream of chicken soup in casserole dish. Mix melted butter over medium heat. Add salt, pepper and flour. Stir constantly. Slowly add milk. Stir and cook until smooth and thickened. Use this sauce to layer above casserole. Bake at 300 degrees for 1 hour.
