CHICKEN ROCOCO 
4 deboned, skinless chicken breasts
Cheddar cheese, cut into strips
2 eggs
Seasoned bread crumbs

Flatten chicken breasts with your hands and cut in half or thirds lengthwise. Place a strip of cheddar cheese on breast and roll up and secure with toothpicks. Dip each piece in beaten eggs and then in bread crumbs. Brown in butter on stove on all sides. Put in a baking dish and bake at 350 degrees for 30 minutes. Serve with rice.
