MARIE'S EMPANADAS 
1 lb. meat
Cheese

Brown 1 pound of meat and add a package of taco or chili seasoning. Grate a bit of cheese.

DOUGH:

2 c. cornmeal
1/2 tsp. salt
2 c. water

Mix well and roll into balls the size of fist. On a wet cotton cloth, with wet hand, pat out cornmeal ball (not too thin). On half of it spoon approximately 2 tablespoons ground meat and sprinkle some cheese on it. Roll cloth over to make cornmeal ends meet. Shape and press with bowl.

Lay Empanada on wet cloth to keep from sticking. Fry until brown on one side, then fry on other.

VARIATIONS: Add potatoes and carrots to meat filling. Make flour dough instead of corn.
