RICE PUDDING 
1 c. rice (cook to directions)
3 1/2 c. milk
1 can evaporated milk
1 c. sugar
2 tbsp. vanilla
2 tbsp. cornstarch
2 beaten eggs
Optional raisins and cinnamon to taste

Cook rice, place in a large pot. Add the milk, evaporated milk, sugar and vanilla. Mix beaten eggs and cornstarch together. Add to rest of ingredients. Stir in medium heat until mixture boils. Add raisins and cinnamon if desired.

Pour into Pyrex bowl with Saran Wrap covering bowl. (This helps to make it creamy.)
