SEAFOOD CASSEROLE 
2 cans (4 oz. ea.) mushrooms
1 green pepper, optional
2 c. finely diced celery
1 lg. onion, chopped fine
2 tbsp. butter
1 can or jar pimentos, chopped fine
1 can cream of mushrooms
1 can cream of celery
3 c. shrimp (salad shrimp, frozen will do)
1 lb. crab meat (can substitute Delicaseas)
2 c. cooked white rice
1/2 c. milk

Saute mushrooms, celery, onions, chopped pepper until soft but not brown. Add pimento and soup, mix well. Add shrimp, crab meat and cooked rice. Mix well and stir in milk. Bake at 325 degrees for 45 minutes.
