TACO CASSEROLE 
Tostito style chips
1 1/2 lb. ground beef
1 med. onion, chopped or use onion powder to taste
1 sm. can cream style corn
1 (10 1/2 oz.) can tomatoes with green chilies
1 (8 oz.) can enchilada sauce
8 oz. Cheddar cheese
4 oz. sliced ripe olives
Oregano, cumin, garlic powder, and chili powder to taste
1 c. Monterey Jack cheese

Break up tostito style chips and cover bottom of 9 x 13 pan. Brown ground beef and drain. Combine rest of ingredients except Monterey Jack cheese. Pour mixture over chips in pan. Combine Monterey Jack cheese with more broken chips. Sprinkle over top. Bake at 325 degrees for 40 minutes.
