JIFFY SALMON PATTIES | |
1 (16 oz.) can salmon 1/2 c. chopped green onions 1/4 c. chopped parsley 1 c. fine dry bread crumbs 2 beaten eggs 1 tsp. prepared mustard 2 tbsp. lemon juice 2 tbsp. cooking oil Drain and flake salmon, reserving 1/3 cup liquid. Combine salmon with green onions, parsley and bread crumbs. Add beaten eggs, mustard, lemon juice and reserved salmon liquid. Fry salmon patties in oil over medium heat until lightly browned on both sides. Makes 6 servings. One (8 ounce) can salmon may be used to half recipe, and use 1/2 amount of other ingredients. |
