RHUBARB MUFFINS 
1 1/4 c. brown sugar
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1/2 c. oil
1 egg
1 c. buttermilk
2 tsp. vanilla
1 1/2 c. chopped rhubarb
1/2 c. chopped nuts (opt.)

TOPPING:

1/2 c. sugar
1 tsp. cinnamon
1 tbsp. melted butter

In mixing bowl, combine sugar with sifted flour, salt, baking powder and soda. In another bowl, combine oil, egg, buttermilk, and vanilla. Add to dry ingredients and mix until just moistened. Gently stir in muffin pans 1/2 to 3/4 full. Poke hole in center of each muffin. Combine topping ingredients. Spoon a dab of filling into hole in each muffin. Bake in 400 degree oven for 20 to 25 minutes.
