PUMPKIN CASSEROLE 
2 c. canned pumpkin
2 eggs, well beaten
1 c. sugar
1/2 c. all-purpose flour
1 tsp. vanilla
1/2 tsp. salt
Pinch of baking soda
1/4 c. melted butter
1 c. evaporated milk

Beat eggs well. Add pumpkin, butter and milk. Mix well. Then add sugar, flour, salt, baking soda and vanilla. Stir well. Put in casserole dish and top with 1/4 cup sugar and 1/2 teaspoon cinnamon.

Bake at 400°F for 30 minutes.
