BRIE CRISPS 
4 oz. Brie cheese, room temperature
1/2 c. (1 stick) butter, room temperature
2/3 c. flour
2 lg. dashes ground red pepper
1/8 tsp. salt
Paprika

Combine cheese and butter. Mix until creamy. Add flour, pepper and salt. Mix until dough almost forms a ball. Turn dough out onto large piece of plastic wrap. Form into a long 2 inch cylinder. Wrap and refrigerate 30 minutes. Roll dough between hands and make 1 1/2 x 8 inch cylinder. Wrap in plastic wrap and refrigerate overnight.

Preheat oven to 400 degrees. Slice dough into 1/4 inch wide rounds. Arrange on cookie sheet 2 inches apart. Bake 10-12 minutes unless edges are browned. Cool on racks. Sprinkle with paprika.
