BANANA TEA BREAD 
1 3/4 c. sifted cake flour
1/4 tsp. baking soda
1/3 c. shortening
2 eggs, well beaten
2 tsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1 c. mashed bananas (2 or 3)

Sift together flour, salt, soda and baking powder. Beat shortening until creamy. Add sugar and continue beating until light and fluffy. Add eggs and beat well. Add flour and mix alternately with bananas (a small amount at a time). Beat after each addition until smooth. Turn into a well greased bread pan, 8 1/2" x 4 1/2" x 3". Bake at 325 degrees for about 1 hour and 10 minutes.
