DINNER IN A PUMPKIN | |
10 lb. pumpkin 3 lb. hamburg 1 c. celery 1/2 c. finely chopped onion 1/2 c. finely chopped peppers 2 tbsp. oregano 1 tsp. salt 1 tsp. pepper 2 tbsp. Worcestershire sauce 1/2 c. light brown sugar 1/4 c. ketchup 2 tbsp. butter Cook hamburg until brown in skillet and drain. In separate skillet saute onions, peppers and celery. Drain. Add to hamburg. Add salt, pepper, oregano, Worcestershire sauce, brown sugar and ketchup. Cook on low heat for 30 minutes, stirring a couple of times. In the meantime, cut off top of pumpkin; clean out inside seeds and strings. Wash out pumpkin. Add all your ingredients into pumpkin. Put top on pumpkin. Place on cookie sheet in a preheated 350 degree oven for 1 hour or until pumpkin squash is soft. Serve pumpkin squash as your vegetable side dish. Serves 10-12. |
