BROCCOLI SALAD 
1 1/2 c. raw whole-wheat macaroni
2 c. broccoli flowerets & sliced stems
1/4 c. parsley
1/4 c. diced red pepper
1 c. sliced fresh mushrooms
3 scallions, sliced thin
1/2 c. sliced black olives
3 to 4 tbsp. lemon juice
1 clove garlic, minced
3 tbsp. olive oil
1/2 tsp. salt
Ground black pepper

Cook macaroni until tender in salted boiling water. Steam broccoli until barely tender and combine with macaroni, parsley, red pepper, mushrooms, scallions and olives. Mix 3 tablespoons lemon juice, garlic, olive oil, salt and black pepper. Toss salad with dressing. Chill and serve.
