CHINESE STYLE FRIED RICE 
1 1/2 c. water
1 1/2 c. Minute rice
3 tbsp. butter
1 egg, beaten
1/3 c. onion, chopped
2 tbsp. soy sauce

Bring 1 cup of the water to a boil in a saucepan. Stir in rice; remove from heat. Cover and let stand 5 minutes. Meanwhile, cook egg in butter in a 10 inch skillet until set. Add onion and the rice; stir until both are lightly browned, about 5 minutes. Combine remaining water and the soy sauce. Stir into rice. Cook about 5 minutes.

Serves 3 to 4.
