PETE LYON'S PEANUT BRITTLE 
3 c. sugar
2 c. hot water
1 c. shelled peanuts or walnuts
Big pinch of soda
Pinch of salt
1/4 tsp. cream of tartar

Stir the sugar, water, cream of tartar, and salt together until dissolved. Set on the stove and boil gently without stirring or moving the pan until the syrup turns straw color. Add the soda.

Put the nuts into a greased pan. Pour syrup over nuts; allow to cool. I cook syrup to hard crack stage.
