3 lb. pork loin, cubed 12 c. water 1 med. onion, chopped 6 bay leaves 3 (15 oz.) cans hominy 1/2 c. chopped fresh parsley Salt & pepper to taste Seasoned salt to taste 2 garlic cloves 4 ribs celery, chopped 2 tbsp. chili powder Shredded lettuce Sliced green onion Oregano Sliced radishes Lime wedges Combine all ingredients except chili powder and simmer 3 to 4 hours or until meat is tender. Remove bay leaves and garlic and add chili powder. Simmer 20 minutes. Serve in bowls. Accompany with separate bowls of shredded lettuce, green onions, oregano, radishes and lime. Allow each guest to top the stew with his/her choice of condiments. Flavor is richest if stew is made a day ahead and reheated. Serves 8. |
