LOUISIANA OKRA 
2 tbsp. bacon fat
1 lg. onion, sliced into rings
1/2 green pepper, chopped
2 c. (1 lb.) canned tomatoes
1 tsp. salt
Dash freshly ground pepper
1 tsp. lemon juice or grated rind
1 lb. fresh okra, cut into 2 inch pieces
1/4 c. flour
1/2 c. grated cheese

Heat fat in medium skillet; tan onion and green pepper. Add tomatoes, salt, pepper and lemon juice; simmer 15 minutes. Dust okra with flour. Heat oil in another skillet. Add okra. Cook until heated but not brown, reduce heat; pour sauce over okra. Add grated cheese; cover. Simmer 15 minutes. Yields 4 to 6 servings.
