MEXICAN CORN BREAD 
1 sm. onion
1 Jalapeno pepper
1 pkg. mild Cheddar cheese
1 lb. ground beef
1 sm. can cream style corn
1 pkg. Jiffy corn bread mix
1 egg
1/4 c. milk
1/4 c. cooking oil

Brown ground beef and spread it on bottom of an 8 x 8 inch baking pan. Shred cheese, and dice pepper and onion. Mix these together and pour about 2/3 of this mixture over ground beef.

Mix together egg, milk, oil, corn, and corn bread mix. Pour it over the other mixture in baking pan and sprinkle remaining cheese, pepper, and onion on top. Bake at 350 degrees until brown on top.
