BLUEBERRY RICOTTA SQUARES 
1 c. flour
3/4 c. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
1/3 c. milk
1/4 c. shortening
1 egg
1/2 tsp. vanilla
1 1/2 partially thawed blueberries

2 eggs
1 1/4 c. ricotta cheese
1/3 c. sugar
1/4 tsp. vanilla

Combine first list of ingredients. Beat at low speed until combined. Beat on medium speed 1 minute. Pour into 9 x 9 or 9 x 13 inch greased pan. Spread evenly. Sprinkle blueberries on top. Combine rest of ingredients. Beat well. Spoon over blueberries; spread evenly. Bake at 350 degrees for 55 to 60 minutes or until knife inserted comes out clean. Cool. Store in refrigerator.
