OVEN BAKED RED POTATOES 
1 tbsp. butter, melted
1 tbsp. olive oil
2 cloves garlic, minced
1/4 tsp. pepper
3/4 tsp. basil
3/4 tsp. oregano
3/4 tsp. salt
4 lg. unpeeled red potatoes

Mix together all ingredients except potatoes. Cut potatoes into wedges and add to oil and seasoning mixture. Toss to coat, then stand on edge on cookie sheet. Sprinkle 1/4 cup Parmesan cheese over potatoes. Bake 30 minutes at 425 degrees until golden brown.

Loved this recipe! I let the potatoes marinate for an hour and used garlic powder instead of minced garlic. I added a little Italian seasoning, and tripled the quantity of the seasoning mixture and it was DELISH! My picky kids even asked if there were leftovers, to put them in their school lunches!

I altered the recipe slightly by adding a pinch of ginger, chili powder, crushed red peppers, cayenne powder, a splash of soy sauce, and crushed rainbow peppercorn. They smell and taste amazing.

This recipe was helpful. I did not have basil or oregano. I used Italian Seasoning instead. I should have left the potatoes in the oven for longer than 30 minutes as they were not soft in the middle. Overall they were tasty. Probably would have been better if I had poked holes in the potatoes and let sit in fridge for 30 minutes or longer to allow seasoning to set in.

This is also great on the grill. Make a foil pack for each potato... cut into slices, instead of wedges. Sprinkle rest of ingredients over - wrap tightly - turn occasionally. You will know its done - when you can push on the potato - and it gives to touch... can also add a little finely diced onion to the packet... yummy!

This was a great recipe!! I used a little more oregano than recommended and i used grated parmesan, put it in the oven and 15 minutes after i topped it with shredded parmesan. Very delicious with a small side of ranch.
