JAMBALAYA 
4 lean pork chops
1 lb. sausage (smoked)
1 lg. onion
1 med. bell pepper
1/2 c. chopped celery
1 clove garlic
2 c. rice
2 tsp. salt
Black pepper to taste
Cayenne pepper to taste
4 c. water
Dash of Kitchen Bouquet
1 tsp. salt

Cut pork chops and sausage into bite size pieces. Season with salt, pepper, and cayenne. Saute meats. Add vegetables and cook until vegetables are clear. Add kitchen bouquet and water. Bring to a boil. Add rice and 1 teaspoon salt. Reduce heat to simmer, cover, and cook 20 minutes.
