CAULIFLOWER SCALLOP 
1 cauliflower, broken into florets
1 c. coarsely chopped dried beef
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
Pepper, no salt needed with dried beef
1/2 lb. sharp cheddar cheese (2 c.) shredded
Buttered crumbs (dried bread or crushed cereal)

Cook cauliflower in boiling water 7 minutes. Drain and place in casserole. Sprinkle meat over top. Make cream sauce with 3/4 of cheese, butter, flour and milk; pour over meat and vegetable. Bake 10 minutes at 350 degrees. Sprinkle with crumbs and rest of cheese and bake 10 minutes more.
