HOT PEPPER JELLY 
Clean, wash and grind 12 hot green peppers and 3 sweet peppers. Add
1/4 cup water, 3 cups vinegar and 5 pounds sugar.

Boil 15 minutes over moderate heat. Add small amount of green food coloring (few drops). Stir well. Add 1 1/2 bottles Certo while stirring.

Remove from heat and let stand 5 to 10 minutes. Pour into jars and cover with wax, or may be processed in 10 minute hot water bath after jars have been capped and sealed.

Use rubber gloves while handling peppers. Makes 12 jelly glasses. Very good served with lamb, or bagels, etc.
