SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. melted butter

Mix and pour into buttered casserole. Add topping.

TOPPING:

1 c. chopped walnuts
1 c. brown sugar
1/3 c. flour
1/3 c. butter, not melted

Mix ingredients together until crumb stage and sprinkle over top of the sweet potato mixture. Bake at 350 degrees for 30 minutes. May be made ahead, then refrigerated or frozen until ready to use. Bake after taking form refrigerator or freezer.
