AGLIO E OLIO E ALICHIE | |
1/4 c. pure olive oil 1 tsp. or 2 cloves garlic, minced 1 can flat anchovies 2 or 3 leaves fresh basil or pinch of dried 2 to 3 tbsp. water from spaghetti pot Pinch of hot pepper flakes Put oil in fry pan, add garlic, cook until garlic starts to turn color. Add 1/2 can anchovies with oil from can. Cook about 1 minute or until anchovies break up. Add basil and red pepper. Remove from heat. While pasta is cooking take 2 or 3 tablespoons of water from pot and mix in with oil mixture. Cook 1/2 pound spaghetti or pasta of your choice. Strain pasta and put in dish. Spoon oil mixture over pasta then mix until all pasta is coated. Sprinkle with bread crumbs mixture, space remaining anchovies on top. This i one of our favorite quick dishes, so I make the bread crumbs and keep them in refrigerator so I won't have to make them each time. They will keep a long time. BREAD CRUMBS: 1 c. Italian style bread crumbs 2 tsp. dried parsley 4 tbsp. Romano cheese, grated 1 tsp. salt 1/2 tsp. pepper Toast bread crumbs in frying pan, they burn very fast, so stir and watch. Add remaining ingredients. Store in covered container in refrigerator until needed. |
