MICROWAVE ENCHILADA CASSEROLE | |
1 pkg. taco seasoning 1 1/2 lbs. ground beef or turkey, cooked on high 6-7 minutes per pound 12 corn tortillas (can use flour) 1 1/2 lbs. sliced Jack cheese 1 (4 oz.) can sliced black olives or as much as you like 1 bunch green onions 1 can enchilada sauce (need 1 qt. liquid) Put small amount of sauce in bottom of 3 quart casserole, then layer: 4 tortillas, half of meat mixture, half of cheese, half of olives, half of onions, then add more sauce. Then 4 tortillas, rest of hamburger, rest of cheese, rest of olives, rest of onions, 4 more tortillas, rest of sauce. Cover with plastic wrap and puncture with holes (for steam to escape). Cook on high 10 minutes and let stand 5 minutes. Cook again on high 3 minutes. After cooking, top with Cheddar cheese and cover again with plastic wrap for standing time. Can also top with Parmesan cheese during "standing time." |
