MICROWAVE ENCHILADA CASSEROLE 
1 pkg. taco seasoning
1 1/2 lbs. ground beef or turkey, cooked on high 6-7 minutes per pound
12 corn tortillas (can use flour)
1 1/2 lbs. sliced Jack cheese
1 (4 oz.) can sliced black olives or as much as you like
1 bunch green onions
1 can enchilada sauce (need 1 qt. liquid)

Put small amount of sauce in bottom of 3 quart casserole, then layer: 4 tortillas, half of meat mixture, half of cheese, half of olives, half of onions, then add more sauce. Then 4 tortillas, rest of hamburger, rest of cheese, rest of olives, rest of onions, 4 more tortillas, rest of sauce.

Cover with plastic wrap and puncture with holes (for steam to escape). Cook on high 10 minutes and let stand 5 minutes. Cook again on high 3 minutes.

After cooking, top with Cheddar cheese and cover again with plastic wrap for standing time. Can also top with Parmesan cheese during "standing time."

Since microwave ovens vary in power, you may need to adjust your cooking time.
