ENCHILADA CASSEROLE 
1 - 1 1/2 lbs. ground beef
1 c. chopped onion
1 1/2 tsp. cumin
2 tsp. garlic powder
4 tsp. chili powder
1 1/2 tsp. salt
1/2 tsp. pepper
1 c. water
2 c. taco sauce
12 flour or corn tortillas
1 lb. Monterey Jack cheese
1 c. sour cream

I use 1 (8 oz.) can tomato sauce and 8 ounce picante sauce combined.

Brown meat, onion and garlic. Discard grease. Add next five ingredients, cover and simmer for 5 to 10 minutes. In a greased 13"x9"x2" pan or casserole dish, layer tortillas (cut up), 1/2 of taco sauce, 1/2 of beef mixture, 1/2 of sour cream and 1/2 of grated cheese. Repeat layering. Bake at 350 degrees for 30 minutes. Cover with foil the first 20 minutes, remove foil and finish baking. This is great served with chips, hot sauce and guacamole with tomato garnish.
