HAMBURGER SOUP 
1 lb. ground beef
2 tbsp. butter
1 onion, chopped
2 stalks celery, chopped
2 (16 oz.) cans stewed tomatoes including juice
1 lg. potato, peeled and chopped
1/2 tsp. basil
1 c. boiling water
2 beef bouillon cubes
1 (10 oz.) pkg. frozen mixed vegetables

This freezes well.

Brown beef in large pot; drain fat and set aside. Melt butter in pan and brown onion and celery. Return meat to pot and add tomatoes and juice, potatoes, and basil. Dissolve bouillon cubes in the boiling water and add to soup. Partially cover and cook for about 20 minutes or until potatoes are almost done. Add mixed vegetables and continue to cook for about 5 minutes or until vegetables are cooked. Serve in large bowls.
