PEANUT FUDGE | |
2 c. miniature marshmallows 1/2 c. evaporated milk 3/4 c. sugar 2 tbsp. butter 1/2 c. peanut butter chips 1/2 c. butterscotch chips 1/2 c. salted peanuts 1/2 tsp. vanilla Combine marshmallows, milk, sugar, and butter in heavy 2 quart pan. stir over medium heat until mixture boils hard. Boil hard for 3 minutes, stirring constantly. Add peanut butter chips and butterscotch chips and beat until smooth. Stir in peanuts and vanilla until mixed. Pour into greased 7 x 7 or 8 x 8 well buttered pan. Chill until somewhat firm. Cut with buttered knife. Chill until fully firm. (Can use unsalted nuts. If so, add 1/8 teaspoon salt to the sugar mixture.) |
