LEMON COFFEE CAKE 
3 c. flour
1 1/2 c. sugar
1 tbsp. plus 2 tsp. baking powder
1/2 tsp. salt
1/2 c. softened butter
1 1/2 c. skim milk
1 tbsp. grated lemon rind
4 egg whites

Mix all dry ingredients together add milk and beat until smooth. Beat egg whits until peaks form. Fold into cake mix. Bake in tube or bundt pan 40-45 minutes in 375 degree oven.

Cool cake completely and glaze.

GLAZE:

3/4 c. sugar, 10x sugar
1 tbsp. plus 1 tsp. lemon juice

Mix together and drizzle over cake.
